INSTRUCTIONS
- In a measuring cup or small bowl, combine chipotle peppers and sauce, miso, vegetable oil, and brown sugar, and mix well. Reserve 1 tablespoon of the marinade in another bowl and set aside.
- Layer paper towels on a work surface. Arrange the tofu slices in a single layer on the paper towels and cover with another layer of paper towels. Gently press to dry.
- Place tofu in a large container, pour marinade over tofu, and turn gently to evenly coat the marinade. Let the tofu marinate in the refrigerator for at least 1 hour and up to overnight.
- Stir sesame oil and soy sauce into reserved marinade and set aside.
- When you’re ready to grill the tofu, prepare your grill. Light a charcoal grill. When all the charcoal is lit and covered with gray ash, pour it out and arrange the coals on one side of the charcoal grate. Set the cooking grate in place, cover the grill and let it heat up for 5 minutes.
- When your grill is hot, clean and oil the cooking grate.
- Place the tofu slices on the cooler side of the grill, away from the coals. Cover and grill for about 10 minutes. Gently flip tofu and grill until brown and crispy, about 10 minutes more. Transfer to a large plate.
- Using a spoon or brush, apply the reserved marinade mixture to each piece of tofu on both sides. Sprinkle scallions on top and serve immediately.
