Vegan shepherd’s pie recipe

    • 1 pinch black pepper
    • 1 package vegetarian ground beef substitute
    • 1/2 cup shredded soy cheddar

INSTRUCTIONS

  1. Start by preheating the oven to 400 °F (200 °C). Spray a 2-quart baking dish with cooking spray and set it aside.
  2. Peel and cut the russet potatoes into 1-inch cubes and place them in a pot. Cover the potatoes with cold water and bring to a boil over medium-high heat. Reduce the heat to medium-low and cook the potatoes until tender, which should take about 25 minutes. Drain the water.
  3. In a mixing bowl, combine vegan mayonnaise, soy milk, olive oil, vegan cream cheese, and salt. Stir the mixture into the potatoes and mash with a potato masher until smooth and airy. Set the finished mashed potatoes aside.
  4. Heat vegetable oil in a large skillet over medium heat. Add chopped onions, carrots, celery, frozen peas, and tomato to the pan and cook until tender, which should take about 10 minutes.
  5. Add Italian seasoning, finely chopped garlic, and black pepper and stir.
  6. Reduce the heat to medium-low and crumble vegetarian meat substitute into the skillet with the vegetables. Cook and stir until the mixture is hot, which should take about 5 minutes.
  7. Spread the vegetarian meat substitute mixture in the bottom of the baking dish and top it with the mashed potatoes, smoothing them into an even layer. Sprinkle shredded soy cheddar over the potatoes.
  8. Bake the dish in the preheated oven until the cheese is melted and lightly browned, and the casserole is hot, which should take about 20 minutes.
