INGREDIENTS
  1. 800 grams skin on fries
  2. 225 grams chicken breast, diced
  3. 1 tablespoon tikka masala paste
  4. 4 tablespoons olive oil
  5. 1 teaspoon butter
  6. 1 tablespoon ginger & garlic paste
  7. 1/2 large onion, diced
  8. 1 teaspoon chilli powder
  9. 1 teaspoon turmeric
  10. 1 teaspoon cumin powder
  11. 1 teaspoon coriander powder
  12. 1/2 teaspoon salt
  13. 1 teaspoon lemon juice
  14. 125 grams chopped tomatoes (I use the cartons of tomatoes in juice)
  15. Natural yoghurt (for garnish)
  16. Chopped chillies (for garnish)
  17. Chopped coriander (for garnish)
  18. Chopped spring onions (for garnish)
INSTRUCTIONS
  1. Start by preparing the chicken tikka. Add 1tbsp of tikka paste to the chicken and coat all of the pieces. Leave to marinate while you are preparing the masala.
  2. Add oil and butter to a pan over a medium heat. Once the butter has melted, add in the onions and ginger garlic paste. Stir until the onions start to brown.
  3. Next add in the chilli powder, turmeric, cumin, coriander powder, salt and lemon juice. Mix well and leave the spices to cook for a couple of minutes.
  4. Add in the chopped tomatoes and cook on a low heat until the liquid has slightly reduced.
  5. While the masala is cooking, bake or fry the chips until golden.
  6. At this point you can also put the chicken on skewers and grill for around 10 minutes. Be sure to turn the skewers over halfway through and allow to cook until the chicken has slightly charred.
  7. Once the fries are crispy and golden, add them to the masala and mix well so that all the fries are coated well.
  8. Transfer them to a serving plate and top with dollops of yoghurt, chopped coriander, sliced chilies and spring onions.

INGREDIENTS
  1. 4 tbsp chilli oil
  2. 3 dried red chillis
  3. 1 large onion, cut in wedges
  4. 1 tsp ginger and garlic paste
  5. 1/2 red pepper, chopped
  6. 1/2 green pepper, chopped
  7. Handful of baby sweetcorn
  8. Handful of mangetout
  9. Pinch of salt
  10. 1 tsp chilli flakes
  11. 4 tbsp soy sauce
  12. 100ml sriracha sauce
  13. 1 tsp vinegar
  14. 1 spring onion, finely sliced
  15. 150g cooked prawns
  16. 250g sticky rice
  17. Shichimi powder (optional)
  18. Black sesame seeds (optional)
INSTRUCTIONS
  1. Begin by adding the chilli oil to a pan over a medium to high heat.
  2. Add in the dried chillis and leave for about a minute or two to allow the flavour to infuse into the oil.
  3. Add in the onion and ginger garlic paste and stir well.
  4. Once the onions have lightly browned, add in the red pepper, sweetcorn, mangetout, salt and chilli flakes. Mix well for a few minutes.
  5. Next, add the soy sauce, sriracha sauce and vinegar and stir until everything is well combined.
  6. Add the cooked prawns and stir for a couple more minutes.
  7. Finally, serve with sticky rice and garnish with spring onion, shichimi powder and black sesame seeds.
NOTES
  1. Tip – use a small bowl to mold the sticky rice to get a dome shape.

INGREDIENTS

1 lb chicken breast, cubed
1 egg

For the flour mix

1/2 cup corn flour
1/4 tsp white pepper
1/4 tsp salt
1/4 tsp garlic powder

For the sauce

Knob of unsalted butter
3 tbsp sesame oil
1 tsp ginger garlic paste
1 tbsp brown sugar
2 tbsp honey
7 tbsp Sriracha hot sauce

METHOD

For a complete meal, I paired it with peri peri chicken and grilled corn. If you prefer a spicier taste, you can add more chili to the dish. Serves 4-5 people | Prep time: 10 mins | Cook time: 25-20 mins

INGREDIENTS:

  • 1 tablespoon of olive oil
  • 1 diced onion
  • 1 roughly chopped red pepper
  • 3 cloves of garlic
  • 2 teaspoons of chili flakes
  • 1 teaspoon of turmeric
  • 1 teaspoon of paprika
  • Juice of half a lime
  • 300g of white basmati rice, rinsed
  • 600ml of chicken stock
  • 2 teaspoons of salt
  • 100g of frozen peas

METHOD:

  1. Heat a pot with olive oil on medium to high heat.
  2. Add diced onion, chopped red pepper, and garlic. Stir until slightly softened.
  3. Next, add chili flakes, turmeric, paprika, and lime juice. Stir until combined (add a splash of water if the ingredients start sticking to the pot).
  4. Add the rinsed rice, chicken stock, and salt. Stir on high heat until it has boiled, then reduce the heat and cover for 8 minutes.
  5. After 8 minutes, mix in the frozen peas and cover again until the rice has completely cooked (this may vary, but should take around 10-15 minutes).
  6. Serve with your favorite peri peri sides.

DUM BIRYANI RECIPE

Serves 3-4 people      Prep time: 15 mins       Cook time:  1 hour 10 mins

INGREDIENTS

1 lb boneless chicken
1 tsp chilli powder
1/4 tsp turmeric
2 tsp coriander & cumin powder
1 tsp cumin seeds
1 1/2 tsp salt
1 tsp any ready made biryani spice (optional but preferable if you want more spice)
2 tsp ginger garlic paste
Cinnamon stick
3 cardamom pods
Juice of half a lemon
1 cup yoghurt
150ml vegetable oil
1/2 onion
150ml blended tomatoes
3 chillies, slit open
Handful coriander
Handful fried onions
300g parboiled Tilda Pure Basmati white rice
1 parboiled potato, cut in small chunks
1 sheet puff pastry dough
Pinch of saffron in 250ml hot water
Ghee
1 sheet puff pastry dough
Egg
Black seeds (0ptional)

METHOD 

  1. Combine the chicken with chilli powder, turmeric, coriander powder, cumin seeds, salt, biryani spice, ginger garlic paste, cinnamon stick, cardamom, lemon juice and yoghurt. Once mixed, place in the fridge to marinate for at least 1 hour.
  2. Add oil to a pan on medium to high heat and fry onion until golden brown
  3. Add the blended tomatoes and marinated chicken. Cook for 5-10 mins until liquid has slightly reduced
  4. Stir in the chillies, coriander and fried onions. Once everything has mixed, remove the chicken from the heat
  5. While the chicken is cooking, parboil the rice and potatoes
  6. Now it’s time to layer the biryani. Cover the base of a pot with a thin layer of parboiled rice. Then top with all the cooked chicken, parboiled potatoes, remaining rice and saffron water
  7. Add a few tsps of ghee over the rice and using the back of a wooden spoon, make a few holes in the rice to allow it to steam while in the oven
  8. Next, cover the top of the pot with pastry dough. Gently press the edges to seal the pot.
  9. Top with eggwash and black seeds (optional)
  10. Place in the oven at 180°C for 1 hour (tip – after around 25 mins the pastry should be golden brown – cover it with a sheet of foil to prevent it from burning)
  11. Remove from oven, cut open pastry lid and enjoy
