Coconut Curry Ramen Recipe

Ingredients:

  • 4 packs of ramen noodles
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, minced
  • 2 tablespoons red curry paste
  • 1 can of coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cup of sliced mushrooms
  • 1 cup of bean sprouts
  • Fresh cilantro, chopped, for garnish

Procedure:

  1. Cook ramen noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat vegetable oil over medium heat. Add garlic and red curry paste and sauté for 1-2 minutes until fragrant.
  3. Add the can of coconut milk, broth, soy sauce, and brown sugar to the pot. Stir to combine and bring to a simmer.
