Sick Kid Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 cup cooked chicken, shredded
  • 1 cup whole wheat pasta, cooked
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant.
  3. Add the chopped carrots and celery to the pot. Cook for about 5 minutes, until the vegetables begin to soften.
  4. Pour in the chicken broth and water. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, allowing the flavors to meld together.
  5. Add the shredded chicken and cooked pasta to the pot. Stir well.
  6. Season the soup with dried thyme, salt, and pepper to taste. Adjust the seasoning according to your preference.
  7. Simmer the soup for another 5 minutes to allow the flavors to blend.
  8. Remove the pot from heat and let the soup cool slightly before serving.
