KOREAN FRIED CHICKEN BITES RECIPE

Serves 3-4 people      Prep time: 10 mins       Cook time:  5mins

INGREDIENTS

1 lb chicken breast, cubed
1 egg

For the flour mix

1/2 cup corn flour
1/4 tsp white pepper
1/4 tsp salt
1/4 tsp garlic powder

For the sauce

Knob of unsalted butter
3 tbsp sesame oil
1 tsp ginger garlic paste
1 tbsp brown sugar
2 tbsp honey
7 tbsp Sriracha hot sauce
1 tbsp soy sauce

 

Oil for frying

Spring onions and roasted sesame seeds to garnish (optional)

METHOD

  1. Begin by mixing an egg with the cubed chicken and set aside
  2. Mix the ingredients for the the flour (corn flour, salt, pepper, garlic powder)
  3. Coat each cube of chicken in the flour mix evenly and dust off any excess
  4. Heat a pan of oil on a high heat and deep fry the chicken until golden (for around 5 minutes). Then set aside.
  5. In another pan, add in all the ingredients for the sauce over a medium heat. Stir for around 30 seconds – 1 minute until everything is combined
  6. Turn the heat off and add the chicken to the sauce making sure each piece is coated well
  7. Garnish with roasted sesame seeds and spring onion
  8. Serve with rice or enjoy on its own

As the summer season is in full swing, I have an ideal dish for BBQ season – PERI PERI RICE! This dish is both spicy and delicious, and very simple to prepare. For a complete meal, I paired it with peri peri chicken and grilled corn. If you prefer a spicier taste, you can add more chili to the dish. Here is a recipe for PERI PERI RICE:

Serves 4-5 people | Prep time: 10 mins | Cook time: 25-20 mins

INGREDIENTS:

  • 1 tablespoon of olive oil
  • 1 diced onion
  • 1 roughly chopped red pepper
  • 3 cloves of garlic
  • 2 teaspoons of chili flakes
  • 1 teaspoon of turmeric
  • 1 teaspoon of paprika
  • Juice of half a lime
  • 300g of white basmati rice, rinsed
  • 600ml of chicken stock
  • 2 teaspoons of salt
  • 100g of frozen peas

METHOD:

  1. Heat a pot with olive oil on medium to high heat.
  2. Add diced onion, chopped red pepper, and garlic. Stir until slightly softened.
  3. Next, add chili flakes, turmeric, paprika, and lime juice. Stir until combined (add a splash of water if the ingredients start sticking to the pot).
  4. Add the rinsed rice, chicken stock, and salt. Stir on high heat until it has boiled, then reduce the heat and cover for 8 minutes.
  5. After 8 minutes, mix in the frozen peas and cover again until the rice has completely cooked (this may vary, but should take around 10-15 minutes).
  6. Serve with your favorite peri peri sides.

DUM BIRYANI RECIPE

Serves 3-4 people      Prep time: 15 mins       Cook time:  1 hour 10 mins

INGREDIENTS

1 lb boneless chicken
1 tsp chilli powder
1/4 tsp turmeric
2 tsp coriander & cumin powder
1 tsp cumin seeds
1 1/2 tsp salt
1 tsp any ready made biryani spice (optional but preferable if you want more spice)
2 tsp ginger garlic paste
Cinnamon stick
3 cardamom pods
Juice of half a lemon
1 cup yoghurt
150ml vegetable oil
1/2 onion
150ml blended tomatoes
3 chillies, slit open
Handful coriander
Handful fried onions
300g parboiled Tilda Pure Basmati white rice
1 parboiled potato, cut in small chunks
1 sheet puff pastry dough
Pinch of saffron in 250ml hot water
Ghee
1 sheet puff pastry dough
Egg
Black seeds (0ptional)

METHOD 

  1. Combine the chicken with chilli powder, turmeric, coriander powder, cumin seeds, salt, biryani spice, ginger garlic paste, cinnamon stick, cardamom, lemon juice and yoghurt. Once mixed, place in the fridge to marinate for at least 1 hour.
  2. Add oil to a pan on medium to high heat and fry onion until golden brown
  3. Add the blended tomatoes and marinated chicken. Cook for 5-10 mins until liquid has slightly reduced
  4. Stir in the chillies, coriander and fried onions. Once everything has mixed, remove the chicken from the heat
  5. While the chicken is cooking, parboil the rice and potatoes
  6. Now it’s time to layer the biryani. Cover the base of a pot with a thin layer of parboiled rice. Then top with all the cooked chicken, parboiled potatoes, remaining rice and saffron water
  7. Add a few tsps of ghee over the rice and using the back of a wooden spoon, make a few holes in the rice to allow it to steam while in the oven
  8. Next, cover the top of the pot with pastry dough. Gently press the edges to seal the pot.
  9. Top with eggwash and black seeds (optional)
  10. Place in the oven at 180°C for 1 hour (tip – after around 25 mins the pastry should be golden brown – cover it with a sheet of foil to prevent it from burning)
  11. Remove from oven, cut open pastry lid and enjoy

In the last few months, to make up for not dining out at restaurants, we have been experimenting in the kitchen and attempting to recreate restaurant-style meals at home. One of our recent creations has been Mongolian beef, inspired by P.F Chang’s. Traditionally, this dish tends to be more sweet than spicy, but we switched things up and increased the spice level. We personally prefer more heat, but one could easily reduce it by leaving out the chilies.

To make this recipe, it’s essential to use high-quality beef. I obtained mine from Mamluks, a well-known company that provides pure, simple, hand-cut halal meat to Muslims living in Norway. MONGOLIAN BEEF RECIPE

Serves 3-4 people      Prep time: 10 mins       Cook time:  10mins

INGREDIENTS

1 lb Gafoor Pure Halal beef steak, cut in thin strips
2 tsp sesame oil
2 tsp soy sauce
1 tsp garlic powder
1 tsp white pepper
1/2 cup corn flour (plus 2 tbsp corn flour)
1/2 cup vegetable oil for frying the beef 

For the sauce
2 tbsp vegetable oil
1 tbsp ginger garlic paste
7 dried red chillies
1/2 cup soy sauce
4 tbsp brown sugar

Spring onions and roasted sesame seeds to garnish

METHOD

  1. Combine the sliced beef with the sesame oil, soy sauce, garlic powder, white pepper and 2 tbsp corn flour. Allow to marinate in the fridge for at least an hour
  2. Remove from the fridge and coat the marinated beef slices in the remaining 1/2 cup corn flour. Dust of any excess
  3. Heat the vegetable oil in a pan over a high heat and fry the slices of beed for around 30 seconds to 1 min on each side. The beef should have a crispy coating. Once fried, remove from the heat and set aside
  4. For the sauce, add the vegetable oil, ginger garlic paste and red chillies over a medium to high heat. Mix for a few mins until the chillies sizzle. Then add the soy sauce and brown sugar. Mix and boil on high heat for 3-4 mins
  5. After boiling, reduce the heat and toss in the beef slices until well coated. Simmer for a few mins
  6. Garnish with spring onion and roasted sesame seeds. Serve and enjoy!
