Kerala Seafood Curry Recipe

  1. Wash the seafood thoroughly and let it drain.
  2. In a large pot, heat the coconut oil over medium heat. Add onion, garlic, and ginger, and fry for 2-3 minutes until the onion is soft and translucent.
  3. Add the tomato and fry for an additional 2-3 minutes.
  4. Add all the spices (cumin, turmeric, coriander powder, cinnamon, cardamom, and dried red chilies) and fry for 1-2 minutes.
  5. Add the coconut milk and mix well. Let the soup simmer for about 5-7 minutes.
  6. Add the seafood and let it simmer for another 5-7 minutes until the seafood is cooked and the sauce has thickened.
  7. Season with salt to taste and serve immediately with chopped fresh coriander.
