Ingredients

For the Custard Base

Milk 500 ml
Sugar 100 g
Egg Yolks 4
Plain Flour 2 tbsp
Butter 50 g
Vanilla Essence 1 tsp

For the Masala Chai Concentrate

Green Cardamoms 5
Black Peppercorns 5
Cloves 5
Cinnamon Stick 1
Fresh Ginger 1 inch
Water 500 ml
Black Teabags 2
Sugar 4 tbsp

Procedure:

  1. First, prepare the Masala Chai Concentrate. Crush the green cardamoms, black peppercorns, and cloves in a mortar and pestle.
  2. In a saucepan, add the crushed spices, cinnamon stick, fresh ginger, and water. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.
  3. Add the black teabags and sugar to the pan and simmer for another 5 minutes until the sugar dissolves.
  4. Remove from heat and let it cool completely. Strain the liquid and set it aside.
  5. Next, prepare the custard base. In a saucepan, heat the milk until it comes to a boil.
  6. In a mixing bowl, whisk together the egg yolks, sugar, and plain flour until the mixture becomes pale and creamy.
  7. Slowly pour the hot milk into the mixing bowl, whisking continuously to prevent the eggs from curdling.
  8. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
  9. Remove from heat and stir in the butter and vanilla essence. Allow the mixture to cool.
  10. To assemble the tiramisu, dip the ladyfinger biscuits into the cooled masala chai concentrate, then layer them at the bottom of a rectangular dish.
  11. Spread half of the custard mixture on top of the ladyfingers, then repeat with another layer of soaked ladyfingers and the remaining custard.
  12. Cover the dish with cling wrap and refrigerate for at least 4 hours or overnight.
  13. When ready to serve, dust the top of the tiramisu with cocoa powder.
