Seafood Lasagne Recipe

Ingredients:

40g butter
1 medium leek, trimmed, halved, washed, thinly sliced
2 medium carrots, peeled, finely chopped
1 tsp fresh lemon thyme leaves
2 garlic cloves, crushed
1/3 cup plain flour
2 cups Massel chicken style liquid stock
2 cups milk
1 tbsp dijon mustard
1 cup grated tasty cheese
500g salmon fillets, cut into 2cm pieces
200g ling fish fillets, cut into 2cm pieces
12 (400g) green king prawns, peeled, deveined
2/3 cup panko breadcrumbs
1 tbsp olive oil
6 fresh lasagne sheets
Green salad, to serve

Procedure:

Melt the butter in a large frying pan over medium heat. Add the leek, carrots, lemon thyme, and garlic and cook for 5 minutes until the vegetables are soft.
Add the flour and stir well. Gradually add the chicken stock and milk, stirring constantly until the sauce is thick and smooth. Add the mustard and cheese and stir until the cheese melts and the sauce is smooth.
Add the salmon, ling fish, and prawns to the sauce and gently stir. Season with salt and pepper.
Mix the breadcrumbs and olive oil in a small bowl.
Spread a thin layer of sauce in the bottom of a large baking dish. Place fresh lasagne sheets on top, and then add a layer of seafood and sauce over the lasagne sheets. Repeat the process with lasagne sheets and seafood layer, and finish with a layer of sauce on top.
Sprinkle the breadcrumbs on top of the sauce and bake in a preheated oven at 180°C for 30-35 minutes until the breadcrumbs are golden and crispy. Serve with a green salad.
